This is Carlingford Yoga’s now famous cake and one recipe that our guest always request. It’s moist, healthy, nutritious and absolutely delicious. It’s also very easy to make!
Dry ingredients:
2 cups ground almonds (or even better 1 cup almonds and 1 cup shelled unsalted pistachios)
1 teaspoon (tsp) baking powder
½ tsp baking soda
½ tsp ground cardamon
½ tsp sea salt
Wet ingredients:
3 eggs (beaten)
½ tsp ground ginger
½ cup Xylitol (or agave syrup but Xylitol is healthier)
¼ cup coconut oil (melted but not hot)
Zest of one orange
6 ounces goji berries (or raspberries, prunes, redcurrents etc.)
Glaze:
Juice of 1 orange
Honey (about 3 Tbs)
Pistachio nuts (crushed)
